I'm looking for the very basics here. What should a simple antenna circuit consist of?
Interested in emitting a electromagnetic wave and want a novice example to start from.
Would the minimum components for a circuit like this just be an AC power supply and the positive and negative ends of a conductor touching a metal rod?

A simple antenna is just one or more pieces of wire. The shape and length of the wire depends on the frequency you want to use. And on how elaborate an antenna you want. For the AM band, just a long vertical wire will work, the longer the better. The link has a simple AM antenna that is better than the single wire approach.
More elaborate antenna designs have a coil of wire, or a dish reflector.
"emitting a electromagnetic wave" you need more than the antenna. An antenna converts electrical power to EM power, or the reverse. You need an RF oscillator, and a power supply or battery to power the oscillator. The oscillator is connected to the antenna either directly or via an amplifier for more power.

How the capacitors behave when connected with AC & DC power supplies?

This will answer both of your questions.
DC - look at the symbol for an inductor and a capacitor. Of you stretch an inductor out, it's just a straight piece of wire, which has negligible resistance. And a capacitor looks like a brick wall, or open circuit. For transient DC analysis, look at two times, To, when you first turn on the battery, and Tss, at a point much later in time, as t goes to infinity.
For an inductor, at t=To, it looks like an open circuit, and at Tss, it looks like a short circuit, like a straight piece of wire. So, looking at a plot of voltage across the inductor, at t=0, the value will be some V(determined by the other stuff in the circuit), and will decay exponentially to zero as t goes to infinity. For the current, at t=0 I=0(an open circuit) and will increase exponentially, flattening out to some steady value I(determined by the rest of the circuit) as t goes to infinity.
For a capacitor, it will all look the opposite. a capacitor at to looks like a short, and at Tss looks like an open circuit. So for voltage, at T=0, voltage across a capacitor will be zero, climbing exponentially and flattening out to some V(determined....) as t goes to infinity. The current will start at some I(determined....) at to, decying exponentially to zero as t goes to infinity.
AC - everything will look like a sine wave, v's and I's, just shifted in phase. capacitors and inductors are just integrators and differentiators, mathematically. for an inductor
Vind. = LdI/dt
For a capacitor
Icap. = (1/C)dV/dt
The derivative of sine is cosine and the derivative of cosine is -sine. The two waves look the same, they are just shifted in phase
So the voltages across and currents through will look like sine waves with various degrees of phase shift(determined by the overall impedance of the circuit). Now the amplitude of these waves will be smaller than your source voltage. inductors and capacitors in AC circuits can be looked at like variable resistors whose resistance depends on the frequency of the wave going through it.
But graphically the shape of the waves are simple sinusoids.
And steady state is AC after enough time to let any transients settle out.
