What's the use of non-inverting Buffers? And mosfets vs transistors ?

Take a look at figure 4 here http://www.imagesco.com/articles/picstepper/03.html Why are the 4050 hex buffers needed? Is it because the PIC outputs are open drain/collector. So if I try to build a similar circuit but using an AT89C2051 I can simply ignore these buffers right?

Moreover on that same schematic, TIP120 darlingtons are used. Now in another good resource on the subject ( figure 4 http://www.parex.org/weblog/archive/000049.html ) the circuit uses IRF542 mosfets. Which would you use and why? ie what are advantages etc. And do mosfets include the inductance protection diodes as the TIP120's do.

I don't know the PIC's specifications. Since you are using it or contemplating doing so, I must assume that you have them.

If its outputs are open collector, then yes, that is why the buffers are used.
If its outputs are not open collector, the buffers are used because the PIC's outputs can't supply enough base drive for the Darlingtons.

One advantage of mosfets is that they have a higher input impedance than bjts, needing a voltage rather than a current to drive them.

Another advantage of a mosfet is that its drain/source voltage is much lower than that of a Darlington's when switched 'on'.
Vce of a Darlington can not possibly be lower than a Vbe (of the lower transistor) for obvious reasons, plus a Vce of the upper transistor.

At high currents, then, the "on" dissipation of a Darlington is much higher than a mosfet's.

The mosfets in the diagram in your link clearly do have diodes across them - they're drawn across drain-source.
