1) The redness of a laser's output light is not determined by how much power goes into the laser.
A laser can be made to emit red light, with *any* power output. 1mW, 1kW, 1MW. It's still red light, but its brightness will vary according to how powerful the laser is.
2) Yes. Some lasers produce beams. You can also produce other geometries, but linear cavities are the most common.
3) A laser can be designed to produce green light at any power output. 1mW, 1kW, etc.etc. They will generate light with the same wavelength, but the power in the beam is goverend by the engineer and the budget for the project.

Laser Module How do I make a very simple light switch?
I have a simple laser module with a positive and negative going to a 9v battery. I want to make a laser sight for my gun. I'm just going to strap this onto the side of my gun. I want the laser to be OFF and when I put my finger on it, and it to turn ON when i take my finger off.
This way I can put my finger on something while not firing, and when I take my finger off the button in order to shoot, the light will come on.
You might be able to find something like that at Radio Shack or another electronics supply store - it sounds like what you are looking for is called a "normally closed momentary switch," which means that it is normally on, but when you push it, it breaks the circuit. You might also want another switch (a toggle kind) to turn the entire system on and off, since the way you have it set up, it will always be on when the button is not depressed. Also, if you have literally just a laser module and a battery, it probably won't work - you'll need some other components to control the current/voltage that is going into the laser module, otherwise it won't light or you'll burn it out. Honestly though, I think you might be very disappointed with the results you get - it's hard to align something like a laser sight on a gun to begin with, and without proper mounting equipment, the shock from firing it will knock everything out of position. Plus, having extra things tacked onto it, like loose wires and switches, certainly won't help with safety.... so I think it goes without saying, but be careful.
