Quick Release Weaver Rings?

Now, I'm not quite sure which height I'm supposed to be looking for because I haven't really decided on the scope (see scope question). I just want to know which product has the best quality, etc. I know there are a ton more options out there. If you know of any that you'd suggest, please do so.
I would choose the one that is easiest to use but offers excellent stability and is convenient to attach. I have done my own scope mounting and have used the leupold Quick Release, but I have never had any reason to quick-release it.

'Base model' AR 15 manufacturer?
I went to a gun show over the weekend and saw an AR 15 for about $800 bucks. The guy said it was the 'plain vanilla' of AR 15's because it was about as basic as you can get them. It was a flat top with a rail for mounting your optics, didnt have any bells & whistles, and I forgot the manufacturers name.
Anybody know who makes a stripped down version of the AR 15? My google searches arent coming up with much.

You can pick up a basic DPMS and Bushmaster for about that price. Or you could buy a Del-ton parts kit and stripped lower for slightly less.
